Salsify is a root vegetable known as the "oyster plant" for its mild, oyster-like flavour when cooked. Its creamy taste makes a fantastic versatile side dish that doesn't overpower other foods. Treat it as parsnips and add it to soups, stews and mashes. Delicious roasted with mustard, soy sauce and honey. It comes in a bunch of 200g.
