It makes 8 to 10 medium sized croquettes. They go well with yogurt dip with cucumbers, dill and garlic



Ingredients

  • 1 kg potatoes
  • 200g peppers
  • 100g kale (chard or spinach are suitable replacements)
  • 1 onion (red or white)
  • Handful of parsley
  • 2-3 garlic clove

From the cupboard

  • Breadcrumbs
  • Salt to taste
  • ½ teaspoon paprika
  • 1 teaspoon oregano

Instructions

  1. Steam the potatoes. Leave them whole with the skin on to prevent the croquette mixture becoming too liquid.
  2. Meanwhile chop in small cubes the peppers, mince the onions and kale
  3. Stir fry the veg until soft. Season with salt and paprika
  4. Peal the steamed potatoes, season with salt and oregano and mash them up without aiming to make it too smooth.
  5. Add the veg stir fry, minced parsley and 3 cloves of crushed garlic into the mash.
  6. Grease a baking tray. Form your croquettes into your preferred size. If you wet your hands it will prevent the mixture from sticking. Roll into the breadcrumbs and place into the tray.
  7. Bake until golden brown
