This salad is one of our favourites in the Veg shed as it's quick and very delicious. It goes very well with potato mash or lamb

Ingredients

  • 1/2 red cabbage
  • 2 medium sized carrots
  • 1/2 fennel
  • 1-2 oranges

From the cupboard for the dressing:

  • 1 heaped teaspoon cumin seeds
  • 1 tablespoon mustard
  • 3 tablespoons balsamic vinegar
  • 6 tablespoons olive oil

Instructions

  1. Shred thinly the red cabbage and massage with salt until softens
  2. Shred thinly the fennel. Grate the carrots. Peel and cube or wedge the oranges.
  3. Mix the dressing and adjust to your taste.
