One of Britain's best-kept secrets, Carlin Peas are a much-loved traditional food in the North of England and make a great alternative to chickpeas. They give nutty taste to soups and stews, make a delicious hummus and bring lovely crunch to your salads. Soak overnight with soda bicarbonate to soften the peas. Then cook for about 45 minutes and enjoy.
